Install Frostfall and iNeed (or other mods you know of to improve the experience more). Try to survive as a hunter. Limit yourself to gear a hunter would use, like leather armor. Maybe upgrade your bow and arrows if you get enough money. Avoid staying in inns or doing big quests. Use pelts either to sell or to upgrade your tent or armor. Survive as long as you can. Maybe add another goal, like collecting enough money to buy your dream home (Solitude) or build one with Hearthfire. Once you do that, settle with a family.

Then maybe start questing if you feel like continuing with that character. If you have Alternate Start, maybe avoid Helgen until you get to this point so you can get to it later and start the main questline from the dragon attack.
