I recently got finished with clearing a sand island which is right across a river from my house. It's completely flat, but i'm not sure what to build on it. There was another sandy island, but I've built a really tall lighthouse on that. I would love suggestions!

How do you guys stay engaged for long periods of time?

I have no problem getting re-addicted for a few weeks at a time; usually just long enough to build a simple base. But before I can really nestle down and get building really cool stuff and getting to know people on the severs I play on, I inevitably have to step away from playtime and end up losing interest.

I'm having this issue with a lot of games to be honest but MC is really one that I enjoyed a ton and want to play more. But it sort of feels like without my rambunctious group of friends around anymore I don't have as much fun--and I can't seem to stick around long enough to make friends on servers.

How do you guys get engaged? What do you like DOING? What do you avoid like the plague?

Farming & mining modpack to introduce my GF into Minecraft

I did not play Minecraft for a very long time and am overwhelmed by the amount of mods out there and how to get all of them to work or how to find the right modpack for me and my girlfriend.

She enjoyed farming simulation in the past (i.e. Farmville & Harvest Moon) so I would like to find a modpack that offers all the cool farming related stuff for her and all the mining stuff for myself. We do not care about that super hardcore engineering stuff.

I just want her to explore this game for the first time and find many cute animals, fruits and vegetables while doing so. When we start mining, I want us to find more than just iron, gold and coal.

I tried "Farming Valley" but the story mode seems to be broken (get stuck every time I am supposed to give turnips to one of the NPCs) and there is not much to do if you want to go mining.

tl;dr please help me find a modpack that focuses on flora, fauna, and mining, but is not overwhelming for my GF who is not a gamer.

EDIT: Installed Pam's HarvestCraft, AgriCraft, Biomes O'Plenty, Natura, M-Ore, Metallurgy, Tinker's + tweak, ExtratiC, Mo Creatures, and Hats on 1.7.10 so far.
