Wanting to learn programming. Where do I start??

TL:DR Want to learn programming for making Minecraft mods. Where can I go to learn programming languages like Java and Python.

I've always been really adept with computer engineering and networking, but programming is something that has always fascinated me. Specifically programming AI and coding mods for games. After playing Minecraft for many years, I'm never satisfied with what is offered in vanilla gameplay. I've tried implementing mods, but everything, aside from the amazing shaders and resource packs, just feels bland. I really want to design mods that don't necessarily change the game, but improve upon the foundation that's already there without taking away from the essence of the game. For example, coding more advanced behaviors for the villagers and various animals, or designing a realistic weight system where you put on a backpack or a storage saddle on a horse to transport a large number of items.

What are the various programming languages behind all the different versions of Minecraft and where do I go to start learning? I've never done any kind of programming whatsoever so I'm starting from scratch. It's gonna be weird trying to switch mindsets. Was going to college for my A.A.S. in Information Technology with some networking thrown in there.
